Anonymizing Google Analytics

Good afternoon, I have a doubt that I can't solve (maybe because I'm a bit confused). If, after implementing cookiebot, Google Analytics would be anonymized, would I be doing a useless operation or would I have the advantage of being compliant with consent management without the risk of losing data if consent is denied by most users? I must point out that I cannot implement Google Consent Mode. Could anonymisation therefore be an alternative to Consent Mode?
If it is not useless and I can proceed with anonymisation, are there any specific steps related to cookiebot to do or is it enough to set anonymisation in the backend without further steps/settings?
